A loaf is just a more portable, and easier-to-cut form of cake, right? And that's great, but I'm always slightly wary of loaves, especially if I'm eating out, as in my experience they have an unfortunate tendency to be over-baked and (horror of ALL baking horrors) dry...
So when I do make a loaf I go all-out to ensure that it is absolutely not over-baked. The great thing about any baked goods with carrot (cakes, loaves, muffins etc) is that it's pretty difficult to make them dry - you have to either be trying very hard (maybe you're one of the few people in the world that like dry baking?) or you've forgotten to put a timer on! So, no excuses, check your timer, and get baking this warm and cozily chai spiced carrot cake loaf perfect for enjoying on those chillier autumnal evenings we'll be having soon - and yes, you have been warned, it WILL BE MOIST!
