Air fryer felafel with mint tarator

Last weekend I finally gave in and bought an air fryer. For someone that cooks a lot, I'm not really big on kitchen gadgets - mostly because I don't like the amount of space they tend to take up, when, if I'm totally honest, I'll probably use them once or twice a year. But air fryers sound too good not to try, and I got straight to it...

Usually when I make felafel, there are large quantities of oil involved. What can I say... I like them super crunchy! But in the air fryer, except for a quick spritz of baking spray, I didn't use any oil at all - and they were crisp, crunchy and firm. Perfect!

But if you're going to have crisp air fryer felafel, then you need plenty of thick, creamy sauce to serve alongside and tarator works so well. I made mine with plenty of mint to give it loads of bright summery flavour and a pretty green hue.
