Apricot and vanilla Louise slice

Louise slice is an oldie but a goodie. Shortbread, jam and coconut meringue - genius! I adapted this recipe from one in an Alison Holst slice recipe book I've had for years, and you can make it with just about any fruit preserve - they all seem to work well. It does help however, if your jam or preserve is of a thicker consistency if possible, because I've found some of the thinner ones have a tendency to make the meringue sweat (and melt away) - and nobody wants sweaty meringue!


My version - an apricot and vanilla Louise slice - is how I use my stash of Apricot jam. In the winter it's a welcome reminder of those gorgeous summer stone fruit flavours. But use the jam flavour you love.
