Beef carnitas and avocado burrito bowls

I use my instant pot to make any kind of braised meat. To me it seems almost magical just how quickly the toughest piece of meat (gravy beef, I'm looking at YOU!!) can be turned fork-tender... well, I'm impressed anyway! And then I love the way, with carnitas, that you grill the heck out of the finished product and still end up with all the lovely crunchy, caramelised bits that you would have had if you'd pan fried it. Sure, making beef carnitas and avocado burrito bowls can be a little dirty dish-intensive, but they are absolutely worth the clean up.
Right now I'm making the most of the dwindling supply of summery fruit and vegetables... which is a little depressing as I know it's going to be a very long time until they are back in plentiful supply and tasting good. So it's fresh Mexican salsas and Vietnamese salads for the rest of the month - hopefully!
