Shakshuka is such a great weekend breakfast, and let's face it - a much easier way to poach eggs than fussing around with them in water and having most of the egg white disappear to god knows where?!
Green shakshuka with avocado is as quick and easy as the standard 'red' version, but is an even better way to get some more veges into your diet over winter time (and use up those green veges you have lying around). Most veges that are plentiful in winter work well here e.g. cabbage, cauliflower, silverbeet, brussel sprouts, spinach, broccoli etc. And I love mine topped with a generous portion of avocado which is back in season, hooray!
