Weirdly, chia pudding for breakfast seems decadent and indulgent to me, but they're actually really super-nutritious and fantastically easy to make, so I really wonder why I don't make them more often. You can use just about any fruit to flavour your puddings - this time round I went with a berry/banana combo.
This Berry and Banana Chia Pudding recipe also offers an extra nutritious twist to your usual chia pudding breakfast routine, because it's infused with goji, acai and blueberry powders too! Bursting with vibrant colours, rich textures, and wholesome ingredients, these puddings are not just a treat for the taste buds but also nourishing and filling.
These creamy delights achieve the ideal consistency for that all-important chia pudding ratio - thick but not too thick, and nicely 'spoonable'. For this version I used almond milk, but coconut or oat milk would be just as good so use what you have to hand. Garnishing with a dollop or two of Greek yogurt adds a creamy tanginess, as well as making it an even more protein-packed option.
Whether enjoyed as a wholesome breakfast, a satisfying snack, or a guilt-free dessert, these puddings will leave you craving more.
