Grilled pineapple with salted caramel

There's something about pineapple that instantly transports me to somewhere hot and relaxed, where work is far from the front of my mind... basically, beach holidays! Maybe it's because whenever I'm on a beach holiday, I'm straight into the breakfast buffet early every morning loading up my plate with as much tropical fruit as it will comfortably hold.


And while I can't always be on holiday, I can always be eating holiday food. Pineapples are one of the few fruits that are reliably good when it comes to eating fruit out of season, which I'm generally not a big fan of... the texture is usually just SO wrong, don't get me started. But pineapples tend to stay firm and juicy, which is just how they should be.


Grilling pineapple is a lovely way to enjoy it - the sugars in the fruit caramelise, and the flavour becomes even more intense. And you can grill the pineapple so that it still stays firm in the centre... I mean, who wants fruity mush?! The small batch salted caramel sauce doesn't take long at all, and goes particularly well with pineapple (though you can use it with all sorts of sweet treats). Try a scoop of vanilla bean ice cream alongside the grilled pineapple with salted caramel, or go super decadent and serve it with coconut rice pudding.
