Cream cheese in cookies? Yes please! This recipe substitutes cream cheese in place of butter, which completely changes the texture of the baked cookie and the idea totally intrigued me, so I had to give it a go. The end result is soft, light and fudge-y, and the batter holds it's shape as it bakes much better than a butter-based cookie tends to. Also, no butter and sugar creaming - whoop, whoop!

It does, however, seem to lose any of the 'chew' you get with a butter cookie. I would describe these dark chocolate & orange cookies as more of a cake-y/brownie texture. So, pros and cons - but what in life doesn't have those? (Baking life lesson!) I think I need to do some further experimentation with this method. I'm not completely certain I have a handle on how it all works yet. I definitely see more cream cheese cookies in my future...

This recipe is one that I adapted from Salt and Baker and I am going to be adapting it further to try some different flavour combinations for sure!
