Easy cauliflower and coconut dahl

I love an easy one-pot winter meal that is packed full of seasonal veges - and if I can serve a side of bread alongside for mopping or dipping, then that's even better!


This creamy, cozy easy cauliflower and coconut dhal can bubble away in your kitchen while you catch up with other tasks, it only needs an occasional stir as the lentils soak up all that spicy flavour and slowly start to soften.


I love some sort of bready carb as a side, but rice or cauliflower rice work just as well as an accompaniment if that's your preference. You could also try the dhal in a slow cooker, throwing in all the ingredients in the morning, and coming home to a fragrant savoury smell in the evening, and a healthy meal to curl up on the couch with.


I used The Carefillery's mixed dahl lentils for this recipe, but any mixed lentils will do.
