There is something so comforting and satisfying about roast potatoes, and as is often the way with a 'simple' recipe that doesn't contain many ingredients, the secret to good roast potatoes is all in the technique.
These garlic butter parmesan smashed potatoes take a fair bit of cooking, using two different methods, but you'd probably expect that in order to get those super crispy edges and golden brown colour. The secret to good roast potatoes in my experience is all in the variety of potato you use to start with. I'm a BIG Agria fan - it's the slightly yellow-coloured one, which is perfectly light and fluffy on the inside while holding up to some seriously rough treatment on the outside... i.e. being SMASHED to pieces and roasted to oblivion!
Serve these crunchy, flavour-packed, little mouthfuls with some garlic aioli or herby yogurt.
