Lemon, blueberry and coconut loaf

This light and summery lemon, blueberry and coconut loaf is a real crowd pleaser and it's so easy to make too. Whip it up for a morning tea treat, or a weekend picnic and be the envy of friends and family!
The loaf is a buttery sponge, but because of the addition of the yogurt, the sponge is kept light and doesn't feel oily in your mouth the way some sponges can. I love baking with flavoured yogurt - it's a great way to layer in more flavour to your baking. And using authentic Greek yogurt (like the lovely Vanilla Bean flavoured one from Cyclops that I used) provides a lovely sour tang to this loaf to balance out the sweetness, and well as activating the baking soda.
Coconut is one of my favourite things to add to baking. Not only does it taste amazing, but it provides a variation in texture too - and different kinds of coconut give different kinds of texture. I used thread coconut here, which is a thicker cut (so it's more 'obvious' and chunky, with a bit of bite), but you can use whatever you have to hand.
