Lumberjack cake

This cake is THE ultimate cozy winter cake to bake. It's warmly spiced with cinnamon and allspice, and because it's full of dates, is reminiscent of a sticky date pudding. And just that would be enough, but my Lumberjack cake goes even further, by adding in banana and tart green Granny Smith apples. The crowning glory of any Lumberjack cake though is the topping (see what I did there?! )... a coconut caramel syrup that hardens up as it bakes to the point of being fabulously chewy and crunchy at the same time.

Not only is the cake wonderful to eat, it's super easy to make - it's basically a one-bowl situation, unless you like to mix your dry ingredients together in another bowl (which I confess I do) and don't count the pot to make the syrup in... ok, so possibly not one bowl. But there's no butter and sugar creaming, so that's a win in my book.
