Summer is well and truly here, and I don't know about you, but right now I'm far less inclined to be hanging out in front of a hot stove mopping my sweaty brow and fighting the flaming gas elements than I usually am.
So an easy no-bake coffee walnut slice, that looks after itself in the fridge and then pops out nicely chilled, in a neat little solo portion all ready to go when I want to indulge in a sweet treat, has my heart.

No baking required, just the perfect mix of rich coffee flavor, buttery icing, and crunchy walnuts, all layered over a biscuit base made with the ultimate classic—Griffin's Super Wine biscuits. This coffee walnut slice recipe is a nostalgic taste of classic New Zealand baking that never truly went out of style!
And just a quick note on the walnut and coffee pairing: Wellington coffee snobs like me know the only way to add decent coffee flavour to baking using a powder is with a generous amount of Supreme instant coffee powder (I was totally sold on the packaging, let-alone the flavour). If you can't get it, I'm sorry. Please choose the very best quality instant coffee powder you can afford.
