The best oaty ginger slice

This oaty ginger slice is a BIG favourite in my family, and has been for years. And while it may not be the healthiest of foods - check out that butter and sugar content!!! - it's a lovely treat to enjoy on occasion.
I like my ginger slice to really TASTE of ginger. No messing around with a teaspoon of ginger powder... I'm going in with a tablespoon at least. I also like to use ginger juice for an extra zing of spicy flavour - I use the Just Fresh brand, which comes in a handy pouch (and is also great in cakes, puddings and curries). But if you're not as much of a ginger fan as I am, feel free to adjust the amounts to your own personal taste - that's the beauty of being in charge of the baking!
Given how much sugar is involved in this recipe, it lasts well in an airtight container for 4-5 days at least. That's if you can control yourself around it, and not keep going back for just ONE MORE SLICE... the way I do.
