Rhubarb and almond spice cake

Who doesn't a love a fruity, tart, sweet cake with a light as air buttery crumb? Well, me, for starters... and yes, something can be tart and sweet at the same time. As with most food, it's all about balance.

We're lucky enough to have a very prolific rhubarb plant in our tiny city garden, which just keeps sprouting, no matter how much we cut it back. Subsequently we also have a freezer jammed with ziplock bags of rhubarb pieces. In an effort to be able to shut the freezer, and save power, I came up with a cake recipe to use up some of my rhubarb stash... I just need to make about ten more of them and that freezer door is shut! Thankfully this rhubarb and almond spice cake is totally delicious so I am definitely not complaining about eating another ten more.
