Roast persimmon French toast with nuts and ricotta

French toast is ridiculously easy to make. In fact, it was one of the very first things I learnt to cook as a child. And while my approach to cooking it now would probably be quite different to my approach back then - fancier ingredients, decent cookware and an actual clue about how to cook - my immense enjoyment of it hasn't changed at all.

The flavours in this French toast with persimmon are subtle - it's the textures that pack a punch: fried, buttery toast with a soft centre, creamy mascarpone, firm fruit and crunchy nuts!
