Korean-style cheesy garlic bread

This Korean-style cheesy garlic bread takes something that is already amazing - garlic bread - and makes it EVEN better... by filling the bread with cheese, dunking it in butter and adding more cheese! It's very hard to stop at just one. Don't say I didn't warn you.

This method uses individual buns, which you can buy pre-made or make yourself. I recommend brioche, because it's soft, light texture works so beautifully. And of course I made my own, because I love making bread, but it really doesn't affect the finished product all that much. Use day-old rolls if you have the patience to wait... using bread that is slightly stale makes it easier to cut up for filling, and it soaks up more butter, so win-win!
Korean garlic-bread is often quite sweet, but I leave out any sweetener in this recipe. I know sweet and salty is a thing, and sometimes I'm into it, but not here - here I just want full savoury. But if you're a fan, go ahead and add a teaspoon of sugar to both the filling and the butter dip.
