Fruity dark chocolate bark

I love plain dark chocolate, but sometimes it's nice to add a little bit more - crunch, sweetness or chew.
This fruity dark chocolate bark is a nice healthy snack (sort of like an up-market scroggin?!) and is really fun to make, and super quick!
In the time it takes to melt your chocolate you can have all your add-ins cut up and ready to go, then you just put it all together. Easy!

I used 3 bars of Lindt 85% and made three different 'flavours':
- Raspberry, strawberry and pistachio
- Mango, goji and mixed seeds
- Blueberry, cranberry and pecan
Each were bloody delicious!

To make your own bark melt chocolate until it's runny and warm, then set aside to cool and thicken slightly while you prepare your add ins.
Add ins are just about endless, and don't have to be as 'healthy' as mine. You could try:
Fruit, nuts, seeds, lollies, chunks of chocolate bar, coconut, crushed biscuits, marshmallows, liquorice, pretzels, biscoff, nut butter etc etc

Once the chocolate has cooled, use a baking tray lined with paper and pour some chocolate out onto the tray and use the back of a spoon to gently spread the chocolate out to roughly the shape/size it was before you melted it. Start to gently place (and press) in your add ins, starting with the larger pieces first.

Once you've covered the chocolate, pop the tray in the fridge and leave it to set for 20-30 minutes, until it's hard. Remove and break into snack-sized 'shards'. Keep the bark in the fridge in an airtight container.
